I have an idea but want to plan it out more properly before I start writing it. I am writing with no plot outline for another novel which is a children`s one. So far I am not stuck and nearly at the finish.

I only do some basic plotting before writing. I write mostly contemporary romance, so I create two characters, one or both with some flaw that needs to be "fixed" by the other, find a way to get the two main characters together, create a crisis for one of them, a solution for both of them, and happily ever after.
That's really all you need! I know, sounds WAY simpler than it is.

there is always one or more periods of separation between the two protagonists, physical or otherwise.

I completely love the Snowflake Method (if you google it there are lots of explanations) and that's for plotting anything. My other favorite is http://www.hollylisle.com/fm/ because she has a lot of romance-focused articles.

My advice to you would be not to plan it. Let it flow. Let it be unexpected -- even to you! It's more romantic that way.
