Writing to see what everyone is cooking/baking to keep their spirits up during NaNoWrimo. I have recipes printed out in a binder that I'm going through. :)

"Bacon Burger Taco"

Cook hamburger, then cut in half

Line bottom of hard taco shell with pickle relish and baked beans

Insert half hamburger into taco so that half-moon side aligns with the half moon side of the taco shell (so they match)

Line sides of taco with cheddar cheese and slices of bacon, and either more relish, more beans, or some mustard if you choose instead

Sprinkle taco seasoning on the top of the taco

By now, your hard taco shell will have invariably broken in half. So, put another hard taco shell around that one to contain the baked bean goodness.

Heat in the microwave on high for 50 seconds, until cheese is melted.

Enjoy! :D

Many many 20 minute and super tasty vegetarian recipes in the Moosewood Cooks at Home book! Gets me through many busy days (on my third copy, and need a forth!). African pineapple stew tonight!

Mmm I love the Moosewood cookbooks! I'd love to get a copy of the low-fat favorites, but it's pricier than I'd like to shell out.

A good quick meal:

Quesadillas -- You need tortillas, cheese (I use part-skim cheddar or soy cheddar), salsa, any other veggies/toppings (I like spinach on the inside and sour cream/yogurt and guacamole for dipping, and my husband really likes chili/refried beans).

Spread the cheese, salsa, and other fillings inside a tortilla, leaving about 1/2-1" space around the edge of the tortilla. Place a second tortilla on top. Cook in the oven at 375ish*F for 10-15 min., or until the tortilla begins to brown and puff. (You can also cook on the stove over a medium high flame until the tortilla browns and puffs). Remove, garnish, and devour!

I like to eat these with a side salad -- quesadillas can be so healthy and tasty!
