My MMC is stationed in Japan during the occupation. She's in the Air Force, so what could her potential rank be if it's 1951 and she enlisted in 1949. In addition to that, what could be a job for her that requires her to constantly speak Japanese?

Given they served primarily in clerical and medical roles in the early days, I would assume that if she was actually assigned to the Occupation forces in Japan and had Japanese language skills, she might serve as an interpreter or some sort of liaison position.
