I see so many interesting novel covers on people's posts and author profiles. How do you guys makes these? What do you use? I have MS Paint and that's about as technical as I get!

You should check out the NaNo Artisans forum. Lots of great stuff in there that should help you!
And I only use MS Paint for mine, too... though I don't have one yet for this year.
