Anyone know any good bookstores around Sydney that focus on Fantasy anr/or Science Fiction? In particular I'n looking for books full of fantasy maps, creatures, worlds etc. in illustrated form for inspiration.

Yes definitely check out Galaxy, and while there also have a peek into Kinokuniya (Lvl 2, The Galleries Victoria

Half of the lower ground floor of the George St Dymocks is dedicated to Sci Fi and Fantasy stuff (or at least 6 months ago when I last visited), so you might want to try there too. I got some special editions from there so it's definitely worth a look.
