could a shade of green be described as "evergreen" or is that just a type of plant?

First of all, this is NaNo, so fewer rules to break, if any. Secondly, there is no consistent color of evergreen trees; however, there is that shade of darker green that is pretty common in pine and spruce trees, so I think you could write that and people would know what you were talking about.

Most evergreen trees end up looking like a deep, dark green that is really earthy or sometimes with a touch of blue. So when you say evergreen eyes, that is the image that comes to my mind. It actually sounds really nice. Colors can be difficult because so many people perceive them in different ways.

You may want to consider saying "eyes the color of evergreen", because when I read "eyes of evergreen" I got the image of eyes full of pine needles, heh.
